Dissimilation of lactic acid and ethanol in aerobic culture
in Leuconostoc lactis SHO-54

要旨

The strain of Leuconostoc lactis SHO-54 was cultivated in anaerobic and aerobic culture.At the time glucose was completely consumed out (11 h), the cell mass was 0.5 g/l more aerobically than anaerobically.Acetic acid, however, was produced in both the anaerobic and aerobic cultures, 28 mM of acetic acid and 0.6 g/l of cell were produced while 10 mM of lactic acid and 52 mM of ethanol were decreased after glucose consumed out in aerobic culture.On the other hand, these values were almost constant in the anaerobic culture.
